I tried something new tonight, and now I feel bad for everyone who has to see us tomorrow. Not only do I work at the library tomorrow, but we have a parent teacher meeting in the evening with ALL of the class parents. Whoops. At least we'll make an odiferous impression.

Do you guys like French onion soup? 😅 We do! We now have a bunch of it so we're going to be stinky for daaaaaays. I had never made it before, and I was intrigued by this Croc Pot Version of the recipe that I found. Asside from cutting up so many onions, it was crazy easy and so good!
So here's the simplified version: Fill a small slow cooker to the top with yellow onions sliced thin. Sprinkle in a little salt and pepper and about 2 tablespoons of butter. Cook on high for 8 - 10 hours. (I cut up the onions the night before so I could just turn the slow cooker on and run out the door in the morning.)
When it's all caramelized and delicious looking, dump in a carton of beef broth, a tablespoon of apple cider vinegar, and a teaspoon of thyme. You can add more broth or water if it needs more liquid. Let it sit on warm until you're ready to eat. That's it.

When it was time to eat, I sliced up and toasted day old sandwich rolls to layer on the soup in these adorable ramekins that we use way more often than I thought we would. Then I topped the toast with gruyere cheese from Aldi and threw it into my Air Fryer until the cheese was melted. It looks fancy, tastes amazing, and prep is a breeze. Clean-up is easy too, especially if you have a kiddo that loves to do dishes.

PS: This is not our first air fryer. The first
one we had was SO hard to clean with lots of creases and edges. This one though, is a dream to clean and does so much more than air fry. If we ever wear it out, I'll be replacing it with one just like it.
